Portobello mushroom pizza. Top w/ spaghetti or pizza sauce sauteed onion and spinach mozzarella cheese Choose the amount you like. Spinach cooks down a lot, so I always use at least 1 C / mushroom. We also like really well sauteed onion, so I start w/ those and then add the spinach when the onion is well done. Bake for 8-10 minutes at 400 degrees. So easy.

Here is a really good soup, got this from a friend and I love it ! Easy vegetable soup: Just get two lbs of stew meat and sautee in big pot with an onion..add 3 cans of stock ( I use chicken --16 oz cans ) a 20 oz bag of frozen mixed vegetables and a 20 oz bag of okra , or smaller if you can't find 20 oz (or just use two bags.)..Then you just add v-8 or tomato juice til u cover everything..Bring to a boil and then simmer all day til the big chunks of meat are falling apart ...Only add salt and pepper only --- since any thing else takes away from the flavor..

My favorite recipe is one I just made !! It's a cross between a Salad and a Salsa. I used 1 can of each drained and rinsed, black, red kidney, and Garbanzo beans. 1 can drained corn. A diced red and yellow bell pepper. 1 cup chopped Cilantro, 3 diced tomatoes, I bunch chopped green onions. 2 diced Avocados, 5 fresh squeezed limes. !/2 cup of Italian Salad dressing. Lastly, I seasoned with some garlic powder (only a little) and pepper to taste. I usually add Jalapeno to half for those who like some heat. This makes a huge Bowl. I ate it for lunch with some Multi-Grain Tortilla Chips. I will serve it this evening for my family of 5. Since everyone like different things, I basicall put out a Taco/Nacho Bar. I end up putting the Bean Salad over a few chips with a small amount of cheese melted on top. Lots of shredded lettuce, and a cup of the Bean Salsa Mix. O.K. Who want to come to my house for Dinner? Please bring some Skinny Margaritas!

They sound yummy :) I don't know if I have a favorite recipe, but I will share one that my kids love, Breakfast Tacos: Scrambled eggs Turkey bacon or sausage, crumbled Low-fat cheese, shredded Low-fat plain yogurt Tomatoes, diced Black olives, sliced Mushrooms, diced Salsa or picante of your choice (I use my homemade salsa) Whole wheat flour tortilla Wrap up last night's taco night leftovers, instead of the taco meat, use bacon, sausage, eggs, whichever is your choice. Add toppings, wrap, enjoy.

A salad: 5 tomatoes 2 pickling cucumbers 2 large red peppers 1/2 red onion 1 jar marinated artichokes Slice and toss together. Top with homemade greek dressing: http://allrecipes.com/recipe/absolutely-fabulous-greekhouse-dressing/ The dressing recipe is for 120 servings. I cut it down to 11 and it makes enough for a 17 oz bottle.

My favorite Spark Recipe is probably the Spicy Turkey Mini-meatloaves. I wrap them in turkey bacon, rather than pork, but that bacon wrap combined with the grated carrots makes the most tender and juicy little meatloaf. And it's not very spicy at all if you're a heat-seeker, so go on! Try it! My favorite NON-spark recipe is a stir-fry I make at least twice a week. First a little Canola/sesame oil mix; Shallots, garlic, whatever veg I have on hand (broccoli, bok choi, spinach, chard, green beans, zucchini, carrots, celery!) sprinkle with a little soy sauce, then sometimes I'll add chicken, sometimes tofu, sometimes mushrooms. 2 oz. of thin wheat noodles from the Asian section and one tablespoon of my homemade peanut sauce (you can buy a good one if you have a Trader Joe's handy) I stir all that up and top with cilantro, Thai basil, chopped scallions, etc. Dump a little Sriracha on top, and for about 500 calories (depending on what I use) I get a HUGE bowl of yumminess!

@WELLYBELLY You can get quinoa in the regular grocery store more and more frequently or in the health food section of the regular grocery store. Health food stores definitely sell it. It's a grain that's high in fiber and works great as a substitution for rice or pasta in recipes.

SUPER Simple Chili-Flavored Tuna from "Livin' Lean with Trader Joe's", my new cookbook.
It is my new favorite way to enjoy ahi and it couldn't be easier! Purchase the frozen ahi at Trader Joe's (or anywhere). They don't use any preservatives on their frozen fish and they are frozen when caught. Thaw before using in this recipe.
1 teaspoon chili pepper 1/2 teaspoon freshly ground pepper 1/4 teaspoon salt 4 (4 ounce) ahi tuna steaks 2 teaspoons grapeseed oil or olive oil spray
Add the first 3 ingredients together in a small bowl. Rinse and pat the fish dry with a paper towel. Heat a medium skillet to medium-high, add oil or spray and cook the fish about 4 minutes on each side, depending on how thick the steak is and how rare you like ahi. I like it when I pierce the fish with a spatula and it comes apart easily.
Serves 4 with olive oil spray: 120 calories, 1.5 g fat, 50 mg cholesterol, 185 mg sodium, 4 g carbohydrate, 0 g fiber, 25 g protein
Serve with TJ's Quinoa Duo (frozen) and fresh asparagus. YUM!

A Greek twist to Fish: 1 can of diced tomato's (or 3 large tomatoes diced) 1/4 cup diced onion a teaspoon of crushed red peppers + 2 teaspoons of capers 20 sliced Kalamata Olives (*Mezzetta, pitted marinated w/ herbs and Napa Valley Cabernet) a good plash of juice from the Mezzetta, pitted marinated w/ herbs and Napa Valley Cabernet salt and pepper to taste 2 pieces of cod fillet preheat the oven to 400 spay the pan down, heat it up to medium. Place the onion and crushed red peppers in the pan, give them a minute to slightly soften. Add the tomatoes, capers, olives, juice, salt and pepper. Let it all cook together for 5 - 10 minutes. Once it's all happy, place the fish on the sauce, cover the top of the fish a bit w/ the sauce, and bake for 15 minutes. If you don't have stainless steal or cast iron pan transfer to a baking dish. I serve this over noodles. The sauce looks runny/thin...it is delicious and I use a spoon!!! Someone eating bread would love dipping in it. If you want it thicker let it simmer for 20 minutes before baking the fish...but I'm telling you I love the sauce!!! I have used swai and halibut (any white fish)...and once I cooked prawns and scallops in the red sauce on the stove and made it seafood spaghetti types of dish.

Lately I love roasted veggies. Green and Red Peppers, Onions, Carrots, Broc and Cauli on a sheet pan. Sprinkle a little spice, I love garlic and red pepper flakes and a little olive oil and bake in the over for 45 min at 350. So yummy

My favorite is my daily breakfast...super easy and very nutritious and YUMMY! 1/2 cup cooked old fashioned oats 1/4 cup canned pumpkin 1 large egg, scrambled and cooked in a microwave for 45 seconds cinnamon and splenda to taste 1/4 cup vanilla soy milk, or whater kind of milk you like Stir and eat. I make oatmeal and keep it in the fridge and use 1/2 cup at a time. I also make up this dish in individual servings and keep them for quick breakfast when needed. Can also add flax meal, chia seeds, walnuts etc...

my fave is a fruit jam i make and its so easy i use it on crumpets or put it on top of my porridge you get a bag of frozen berries it can be str awberries or blueberries raspberries i like the mixed berries put in a saucepan with half cup of water bring boil when berries are mushy add a sachet of sugar free jelly i use hartlys strawberry stir in if to thick add a drop more water put in fridge to cool you should have a jam consistancy not a jelly keeps in fridge up to a week. ps defrost the berries first and pour whole bag in juice too

My new favorite recipie: 1/3 c white rice 1/3 cup brown rice 1/3 cup bulgur 2 c water (cook) 1/2 soy beans fresh/ (blanch) from the pod 1TBLSP sesame garlic sauce Cool then mix ingredients and scoop a 1/4c in a romaine leaf...very yummy !

My breakfast everyday is my favorite recipe believe it or not! Oatmeal with chocolate protein powder. Sliced strawberries (or frozen blueberries) and walnuts. You can also use almonds but I prefer the walnuts. I've been eating this every morning for about 3 months now...

Love food, love recipes and recipe books, blogs, websites.
Must say though, my favorite is to purchase, best quality ingredients, that require very little tampering, for example, a beautiful piece of thick, white fish, that can be simply grilled or bbq'd and enjoyed savouring the flavours with a little freshly squeeze lemon.

My parents prepared a very tasty baked chicken recipe which remains today one of my favorites. My father baked homemade bread using sour dough starter. As a teen, I learned to make this recipe and have it ready for dinner when my parents arrived home from work. The recipe is Chicken with 40 cloves of garlic. you may think that the garlic would be overwhelming, but the trick is to separate the cloves and LEAVE THEM IN THEIR SKINS WHOLE. This method give a subtle garlic flavor to the chicken and the cooked garlic cloves can be mashed on a piece of warm bread for a wonderfully simple garlic bread. Our family did not limit the dish to merely forty cloves but added as many as the head allowed. I still make the recipe as an adult but it is not the same with standard supermarket bread.

The whole kitchen sink soup: -I lb of either cooked chicken or cooked, lean ground beef -Jar of tomatoes (canned from the summer) -1 cup of any vegetable that is on it's way to spoiling, but not spoiled -Any left over cooked vegetables -My favorite frozen vegetables -1 box chicken broth (or 1 large jar of homemade chicken broth, when I have it) I cook it in my large dutch oven and cook it for 1-2 hours. The last 30 minutes I season it with whatever fresh herbs I have available (usually Sage, Basil, and Rosemary). I serve it with a side of cornbread or 1/2 of a grilled cheese sandwich.
