Cooked Aldi's ribs-so easy cook from frozen and in 1 1/2 hours or less they're done, also a pan crisped Brussels sprout recipe that I thought was kind of dry though people raved about on the website I found it on, corn on the cob and homemade lemonade.

I made pork stew out of the leftovers from last night... roasted boneless pork loin with yukon gold potatoes & carrots & onions, seasoned with salt & pepper & sage. Today, cut up the leftover meat, added some peas & veggie stock, cut the taters a little smaller, heated on the stove... liquid reduced & almost ready, I added a little heavy cream & extra pepper. O MAN! I figured it at 380 calories a serving.

I can't go back to yesterday because I was a different person then.

Chicken with veggies in sauce over pasta. I just sketched out the recipe with the recipe calculator - comes in under 400 and has high protein and carbs.

Hi Everyone. I am new to this so I really am nto sure what I am doing. We are planning on having salad with chiken breast in a tortilla shell. The shell is low fat and 100% whole wheat so I hope this doesn't add up to too many calories. Has anyone tried something like this before?

Roasted brined turkey breast, sauteed Swiss chard, and a small baked sweet potato with cinnamon.

Starting Weight: 260 lbs. (November 2010)
Quasi-Maintenance: 165 lbs. (June 2011)
Goal Weight: 150 lbs. (reached December 8, 2011)

Size 22W to Size 4

Currently maintaining within 5 lbs. (+ or -) of goal. I weigh daily, but also use a tape measure and the fit of my clothes to guage how well I'm doing.

I'm excited for tonight's dinner - open face meatball sandwiches!
Ground turkey meatballs made with oats, spices, 2 egg whites
Plain tomato sauce with garlic, basil, oregano, a little sea salt
Whole wheat hoagie rolls - I scoop out the middle portion and freeze that for bread crumbs for another meal and serve open face so each sandwich is only about 1/4 of a full hoagie roll

Cook the meatballs in a skillet, then add tomato sauce and seasonings. Scoop into rolls, top with a little low fat shredded mozzarella, and run under the broiler until bubbly.

We'll have that with a big salad and low fat dressing. Yum!

I have chicken breast in the fridge I need to use up...should have thought to marinate it before I left!

I'll probably cook it up with some stir fry veggies, and maybe some Trader Joe's Island Soyaki sauce :)

I admit it, I'm spoiled. I don't think ahead to meals, especially dinner, because my husband usually cooks. I just identified that as part of my problem-I'm unconscious most of the time about food, other than craving it. I don't plan ahead, like I do with the rest of my activities and tasks. Something for me to align with the rest of my day!
