I'm braising a lean pork loin roast, to shred later and make sandwiches on whole wheat Italian bread. They're going to be broccoli rabe, roasted red pepper, shredded pork, and mozzarella cheese, heated till the cheese melts and glues it all together. That, and probably a cucumber yogurt salad, or maybe a tossed salad.
Used to make this awesome sandwich with sausage, but the pork loin is way leaner, and if I braise it in a very flavorful broth, it doesn't lack one bit in flavor. Can you tell? I'm REALLY looking forward to dinner.

I bought a side of salmon and now I have to deal with it. Microwavable bag asparagus, rice with too little tomato juice in it, and lightly-limed salmon with red pepper flakes in the baking dish but not touching the fish. Tomorrow is salmon chowder, then probably a repeat of tonight with brussel sprouts and yogurt involved.
I haven't decided yet...I'm leaning toward splurging on some sushi & miso soup. However my other options include a quick veggie stir fry at home or some homemade chicken parm (baked not fried) and some spaghetti squash. Just a guess but since I need to use up the squash soon I'll probably end up having that! Hmmm...or I might cook up the squash and use that as the rice for the stir-fry!!

Tonight I'm not sure since my boyfriend wants to go out to eat... probably soup and salad from wherever we go. Last night though I made one of my favorite meals that I hadn't had in a long time! It's a Italian Pork Stew with lots of zucchini and all kinds of good stuff. I re-worked the original recipe with chicken when I put it in my recipe box here but I really prefer it with the pork. It's so simple and the hardest part of making it is cutting up the veggies and meat but it tastes like it was slow cooked all day! And it makes a huge pot so now I have leftovers for lunches and another dinner!
