i use a similar method as well.. dip in egg add some seasonings Bread them, (corn flakes do work great!) then i brown them in a pan w/ olive oil and then throw in the oven to finish off.

Ditto below, another good method: crush up corn flakes, mix with seasoning. Dip chicken in egg, then corn flake mix. Oven on 450, drizzle chicken with a teensy bit of olive oil, cook 12-14 minutes, turning once. Lovely crunch!

Try "oven frying" the chicken. Get your sheet pan REALLY hot in your oven as it's preheating. Then use a light brush of olive oil on the pan just before you put the chicken on. Use Panko crumbs to coat the chicken and turn the chicken once suring the cooking process I would brush a little more oil onto the chicken as you turn it and you should have really crunchy chicken.

ok i want to try the new orange glaze recipe i got from sp recipes, but want the crunch of fried chicken breasts for it , any idea how i can do that without so much grease ? thanks !
