I constant obsession for me is sugar snap peas. I typically go through 3 containers of them a week. They're super low in calories (I think about 28 calories for a whole cup), taste delicious, and are a fun thing to munch on throughout the day.

In late summer the fig trees in my yard produced a huge number of figs. However, my landlord and his family don't eat them. The grandfather kept giving me all of these figs. I was eating fresh figs constantly! I started putting them on a cookie sheet whole and freezing them. When they were frozen solid I put them in ziploc bags in the freezer. I must have had 100 of them (maybe more)! Now, in the depths of winter I defrost a few and cut them up and put them in my stir fry. I also make a fig sauce that is great on chicken. I've been eating them a lot. I'm almost figged out, so to speak. I may save the rest for March. As good as they are, you can only eat so many figs.
BTW: They grow everything in my yard. I love all the fresh produce but I'm going to have to buy one of those commercial freezers for the extras! These people grow all of this stuff but they don't like vegetables and the kids won't touch the stuff.

I found this somewhere on SP and have been having it with lunch all week - non fat vanilla yogurt with some coconut mixed in - I also threw in some sliced almonds. Eat by itself or as a dip for fresh fruit- yum!
I also made the ginger garlic rice from SP for dinner tonight but added in some green onion and fresh pineapple chunks - delicious!

BALSAMIC VINEGAR from Costco. I put it on lots of stuff; steamed veggies, brown rice, fish, strawberries, cottage cheese.. and even pizza crust or any bread when I splurge. Two tips though: a little goes a long way and if you cook with it, it becomes sweeter. I bet it would be great with apple slices too but I'm allergic. Enjoy!

Actually preparing a healthy meal. I've been eating fast food and pre-made microwave dishes for two years now, and I HATE cooking. I don't know what's wrong with me, or rather, what's right with me. All of a sudden I went to the grocery store, bought fresh fruits and veggies, salad greens, chicken, and then came home and prepared actual meals!

Roasted broccoli is my favorite right now.
I nuke fresh florets for one minute, then toss with a teaspoon of EVOO, two or three cloves of garlic, sliced, and a sprinkle of sea salt (kosher salt is good, too). Roast it at 450 til the garlic is crispy and the broccoli is starting to brown, then sprinkle with a touch of parmesan.
OMG, is it tasty! You can also throw in some toasted pine nuts, but those are expensive so I usually leave them out.
I am going to start doing this with other veggies, too. So much better than steaming them!

My latest obsession is making breakfast frittatas for myself every morning. Kids just went off to college and I just have to cook breakfast for me because my husbands leaves for work at 5:15am! I use 1/2 cup egg substitute, 1/4 cup shredded potato, onion, mushroom, spinach and feta cheese and do it in the skillet like an omelet. I then put my homemade salsa over it and devour! it is only about 250 calories and very filling. I eat it 4 days a week! Can't help myself.

You would probably like this one, take tuna and mix with a little ketchup, cumin, onion powder and Sazon seasoning and cover with cornmeal, bake till crisp. It looks like salmon and tastes delicious.

I love jicama with lime juice and chili powder or hot sauce. I discovered it in Mexico and found it here when I got back. It's crunchy and watery. There's not much flavor but the texture is addicting and it's like eating celery only better. I also love string cheese with celery, when I am just wanting to chew on something. It's a mental thing.

Popchips are chips, but theyre not baked or fried, according to the package, theyre 'popped'! I'm not really sure what this means, but they are light and crispy and totally satisfying. There are 3 servings in a pretty big bag, and the serving size is enough for me and that is saying a lot! They have them at Whole Foods stores and over in the healthy/organic section of most Jewel grocery stores too

Roasted red pepper hummus - I just can't get enough of it!! Surprisingly, I've also grown to love leeks. They are delicious with salt, pepper, and a bit of lemon juice.

I know this is weird, but I have just discovered TURNIPS and PARSNIPS! Turnips are a great substitute for potatoes in soups and they hold their shape much better.

Im going to try this. I read in my new book that sweet potatoes can keep you looking young. I havent been a fan in the past of them because they are sweet, not crazy about carrots for the same reason, but im going to try this recipe.

Nuts... bought my tradition big bag of mixed in-the-shell nuts to put out for the christmas season. My fiance and I have started an informal "get the nut out whole" competition. The fun and the time shelling makes a single serving more than satisfying.
This is the easiest hard thing I've ever done.

When I was a child I remember that I used to love eating a candy cane and then drinking a huge glass of ice cold water. What a rush that was. Oh for the innocent days, try explaining that one to someone who does drugs.
"The best day of your life is the one on which you decide your life is your own. No apologies or excuses. No one to lean on, rely on, or blame. The gift is yours - it is an amazing journey - and you alone are responsible for the quality of it. This is the day your life really begins." Bob Moawad
