Oh, I LOVE roasted veggies! I think I have roasted just about every vegetable that I cook, including broccoli and cauliflower. My favorites are root vegetables though, I don't even peel them, just scrub the skins really well and roast away. They are really good served cold, too!

Homemade almond milk.

Green smoothies as meal replacements - I start with green leafy vegetables (usually kale) and add fruits, veggies, or both and blend together in almond milk.

And my newest obsession: PB2 powdered peanut butter!

Roasted brussel sprouts. Also, all natural peanut butter. I didn't like peanut butter until I tried the all natural kind without the added oils and sugars.

My new obsession has been a dessert of graham cracker with frozen lite cool whip and a banana on it.

Take 4 graham cracker squares, spread a 1/2 tbsp of frozen lite cool whip on each then slice a medium banana on top. Tastes like banana cream pie and is less than 250 calories.

Cats are not water resistant.

I've got tons! Mashed cauliflower with some garlic salt, a touch of butter, and pepper. Also slicing cabbage and brushing it with some EVOO, garlic and lemon pepper then roasting it in the oven. And I'm also mildly obsessed with making pizzas with FlatOuts. My fiancee and I have perfected the technique of getting the FlatOut juuuust crispy enough to not make a soggy pizza. YUM!!!

Homemade burrito bowls...basmati rice, black beans, corn, and home ade pico. So far it has been my only craving, fortunately I don't feel guilty giving in as it is relatively healthy and balanced. :-)

-10 pounds: Zumba Fitness 2 for Wii (assuming it is still for sale) ORDERED
-20 pounds: ymca or gym membership (still researching best option)
-30 pounds: new workout outfit
-40 pounds: new walking/running shoes

Right now, diet tonic water. I LOVE it! Especially with just a splash of reduced-sugar cranberry or orange juice, or with a tipple of good gin as a cocktail. It's wonderful and refreshing and cures my craving for sodas without making me want lots and lots of sugar afterwards.

Kale for me as well...I've added it to almost every meal for the last week now and can't get over how good it is. It's a family fav...kids even eat it raw ! Love it.


Ohh... and Yo-Nanna !!!!!!!!!!! It's the best ! Got one for Christmas and we just love it. It's basically a frozen fruit dessert ... ice cream style but made with frozen banana's as a base... Delicious !

Baked Spring roll.

OMG, you can stuff it with nearly anything and make them up and freeze them to take out later. The bigger ones are only 45 calories and then whatever you stuff them with.

I've done so far:
Ground beef, onion and spices
Chopped up veggies (coleslaw mix with corn and spices)
leftover Turkey and pesto sauce - my favorite
apples mixture of (fresh apples, cinnamon and splenda brown sugar.)

I can't wait to try more combinations!

dried pineapple-yum! cures a sweet tooth in a hurry!
Veggies..it just hit me yesterday..I was really wanting to add some veggies to my Lean Cuisine meal! Needless to say, after work I hit Super K and the grocery and picked up a few bags of the mixed veggies since I could not find what I wanted fresh at a reasonable price! Got the mixed with broccoli, cauliflower, carrots, water chestnuts, peppers and onions (blends in separate bags but now they are all combine in 1 gallon ziploc..scoop out a cup or 2 and steam!)

I am obsessed with a frozen banana whipped in food processor that has the consistency of ice cream. Found the idea on sparkrecipes and it is as good as they claim.

Salsa Chicken in the crock pot!! Chicken breasts, salsa, taco seasoning 4-6 hrs, so easy and delicious. Eat it without the tortilla and put a tsp nonfat sour cream, YUM
