You're welcome! Do you have a membership to Costco? I buy large jars of roasted peppers there at a very low cost. Trader Joe's also has them for a good price.
Next summer, load up on red, yellow and orange peppers at the farmers market, then roast and freeze them in ziploc bags. They take up little freezer space. :)

I would have never thought to use roasted red peppers in place of tomatoes. Both have a similar mouth feel without putting a bunch of calories in my body that it doesn't need. Roasting peppers is SO EASY to do, so I can buy fresh ones from the grocery store and use them with a number of recipes!

Hi! Try roasted red peppers instead of tomatoes. Instead of citrus, use vinegar or wine.

Can someone make a substitution suggestion for me?

We are allergic to tomatoes and citrus, yet they seem to appear in just about every recipe!

HELP!
