I take dehydrated tomatoes and grind them in my blender, use them instead of purchased tomato paste. Works great, except dehydrated concentrates the sugars and give a sweeter taste to foods than I like. Very rich tomato flavor, though.
I've been accepting a lot of tomatoes from a neighbor's garden, but I have more than I know what to do with! I've made fresh salsa & pico de gallo several times, but I need some new ideas, as they're beginning to age quickly...if I bake or roast older tomatoes, will they come out okay? Should I puree them into marinara sauce? Or if there a better way to use them up? Will they freeze well?

I'm making batches of sun dried tomatoes in my dehydrator. My garden is pumping out pounds of Romas and I'm also trying grape tomatoes for the first time. This will provide a lot of interesting dishes over the coming weeks,
