I'm making tacos tonight using cooked lentils in place of meat. I am going to season the lentils with cumin, paprika, chilli powder, black pepper and cilantro; add a little water, and simmer for 5 to 10 minutes.
I also use cooked red lentils to thicken a pasta sauce that I make with low sodium V8 to thicken the sauce and add some protein. I also add baby spinach, beans and spices and use that over pasta or spaghetti squash, or even yellow squash and zucchini peels.
