I love trying different pizza crusts. I did try the cauliflower several weeks ago, with five to feed and the cost for two heads of cauliflower where I live, it was a bit pricy for winter time, much more work, and we all agreed it was a one time thing. I do love trying to cook the healthiest foods I can, but probably won't make it again. All in all it was the taste that lost out, i spread it thin and it did turn out crispy. But I swear by my whole wheat crust, which of course isn't gluten free but I use all whole wheat flour and even add flax. I have started using my bread machine for the dough and it makes it so much easier and tastes great.

They are good and not crisp as a flour crust would be. Your cauliflower has to be grated very fine and you have to use full fat mozzarella and parm. Spread thin and it does crisp. Yummy!

Has anyone tried this yet? Someone told me they couldn't get it to be crispy except around the edges. Any thoughts before I attemp to make it?
