Any of the exercises can be modified for your fitness level. Also, don't feel like you have to do the whole video, or the whole suggested workout, when you're just starting out. One of the SP mantras is "just 10 minutes a day," and it really does work when you're just getting started.
As for muscle soreness, I've really come to appreciate it in a way. Muscles form when they tear during exercise, then heal themselves over the tears, making your muscles much stronger than they were. It's hard to avoid all soreness, but make sure you're stretching for 10-15 minutes after every workout because that definitely helps.
