We have been through this in our house, husband is diabetic, and he simply can't stand the veggies "standing in" for pasta, and even that Dreamfields makes his sugars go up way higher than ANY plain, ordinary pasta, you just portion it out, he can't have a whole dinner plate full anymore. He will not have anything to do with spaghetti squash, no matter if you kiss it and say it's a celeb, or faux cauliflower mashed potatoes or the like. I have zuchinni with egg subs. for my breakfast, but he won't go for any of that fake nonsense.
Plan for tomorrow, but enjoy the heck out of today.

a great sugestion is to mix 1/3 of pasta with 2/3 of very small chopped cauliflower, and then add a very tasty sauce (i love roasted bell pepper sauce with a little cheese and greek yogurth, plus garlic and onion) you can't feel the veggies and you get some pasta too :)
Pre-spiral cutters most people would just use a mandoline slicer to cut thin cross sections and then saute, use as lasagna noodles, etc. I'd recommend buying a more versatile mandoline over a spiral slicer as you can get more use out of it.
I often shred zucchini, squeeze out some of the moisture and then toss quickly with the hot sauce to cook it as it's already tiny. Or zap in the microwave for a few seconds. I'll use it as a way to get veggies in the morning scrambled with egg whites as well. Zucchini is pretty flavorless and tends to take on the flavor of what you cook it with, but can add quite a bit of moisture which is why I'll wring it out in a clean kitchen towel when I shred it before adding it to a sauce or eggs.

spaghetti squash FTW!!! My Mom used to make spaghetti squash spaghetti before "health food" was even invented. It was just "different".
Or just eat the pasta. Just not so much of it. Unless there's a medical issue, carbohydrates won't kill you. They're good for you. So is protein. And sugar. There's just lots of calories in foods high in carbohydrates, generally. That's why I tend to avoid them if I'm just needing to consume some energy because it's a mealtime.
Unless I WANT THEM. Then I eat them. I love pasta.
Have you ever tried spagetthi squash ? It's available at most supermarkets year round. All you do is boil the squash whole until it is tender. Then you cut it in half. You use a fork to shred the insides. The shreds come out just like strands of spagetthi. It really doesn't taste all that different from pasta.

When I make zucchini pasta, I blanch it first before tossing it with sauce. This helps it not get mushy (I make one thing and then eat it for a week). The skins are the best part! The size of the zucchini does matter though, if it's too big (bigger than about 3" in diameter) I cut the part out that has the seeds since that tends to be mushy and bitter.

Dreamfields pasta is not really low carb--it is a scam. The "protected" carbs really aren't. There was a long discussion about this on the diet/nutrition board a couple of months ago.
OP, do you mean that you have never tried zucchini? Yes, you can eat the skin--just wash it first and cut off both ends. You can buy a spiral vegetable slicer on amazon.com, but I have heard that they tend not to be very reliable kitchen implements. I just cut zucchini into long matchsticks and saute it with garlic in a little olive oil or butter. You would not want to boil it.
ETA: I would wait to try this until zucchini is in season again, around July

Okay I saw this cool gadget on Dr Oz today it showed you how to spiral veggies to make them into pasta not sure where you buy one, anyone ever seen one in the stores? They showed you how it spirals now they left the skin on the zucchini and squash (I've never eaten any of these veggies , so if this sounds stupid that's why) do you cook these spirals after boil them like pasta? is it safe to eat the skins? He didn't say if it needed to be cooked or not he just had like a ready made plate with some and had spaghetti sauce with a little cheese... Has anyone done this? does it taste good? I'd like to try it but don't know what those veggies taste like and I have a hubby and son that aren't to fond of veggies and I'm trying to introduce more into their diets... Thanks for the help!
