I always end up making a taco style layered dip, generally on a cookie sheet because that's easier to scoop. Beans (I love making homemade refried beans which are basically just smashed pinto beans-much healthier than store bought refried beans), rice, cheese (if doing cheese put between 2 hot layers to melt it), a meat of your choice seasoned like taco meat, lettuce, tomatoes, green onions. Salsa on the side. I also do a dairy free version and a vegetarian version. There is never any left. Or a taco bar? I did that for a large party and it was a huge hit. Make everything, serve it buffet style and people pick what they like.

Skinnytaste site had a recipe recently that I tried this week and people liked it. Instead of chicken wings try Buffalo chicken strips. No skin, no fat in the sauce. She also had a low fat blue cheese dip which I did not make yet. I may make this as an appetizer and cut the chicken strips a little smaller to be picked up with a toothpick.

How about fruit skewers for appetizers ? if you're making satai, you already have the wooden skewers. Load them up with chunks of pineapple, honey dew melon, cantaloupe, grapes, strawberries, etc. I've found that if you put fruit on sticks, more people will eat the fruit. People love eating food on sticks. LOL.
Do you like shrimp ? Put some grilled some shrimp on skewers too. And well, if you don't want to grill the shrimp, peel and eat shrimp and shrimp cocktail is a tasty low calorie appetizer.
Also, while I am a big fan of spinach dip, I second having a hummus tray instead. Hummus is yummy and you can dip in toasted pita wedges, cherry or grape tomatoes, celery, carrots and even broccoli.
vegetarian sandwiches/wraps with grilled red bell pepper, grilled zucchini, swiss cheese, thin slice tomatoes, and pesto or aioli mayo
black bean chili lean ground round 1 lb., 2 onions, 1 bell peppers chopped, 1 small can diced tomatoes, 2 cans black beans, 2 carrots chopped, 1/2 tsp chili powder, 1/2 tsp garlic powder, 1 tsp Italian Seasonings
Next Sunday is the Super Bowl and I'm looking for ideas on something different to serve. It seems like we always have the same foods.
We usually have: garlic stuffed meatballs with Provolone on potato rolls Velveeta cheese dip with beans, salsa and hamburger with tortilla chips Various chips and dips Carrots, celery and other raw veggies Barbequed Tri Tip Twice Baked potatoes Cheesecake bites Cookies
You all get the idea.
This year I would like to make some healthier dishes and just something different Hubby wants the meatballs so we will still make those. I found a recipe for a lower calorie spinach artichoke dip that I will serve with celery. I was also thinking bacon wrapped water chestnuts. I was thinking maybe chicken skewers? Or Shrimp something? Trying to keep to finger foods, snacky things.
