Plop the carcass in four cups of water. More of less depending on the size of your bird.

Bring water to a rolling boil, then reduce heat to a simmer. Allow to simmer for four or more hours. Remove carcass and strain the soup of tiny bones

Thirty minutes to an hour before serving. Add desired vegetables. Bring back up to a boil and then reduce to a simmer

Cook rice or pasta before putting it in the soup.

white chili is our favorite for turkey leftovers!

white beans, Rotels, turkey broth, leftover turkey, cilantro (if you like), you can also add some chopped celery, pepper, onions, etc.

We make a turkey noodle soup and the most important thing is to make sure the broth is good and strong (aka simmering the carcas for about 5 hours). Then cool the broth and skim off the fat. The next day, you have good turkey broth that you can use for cooking, vegetable soups, or whatever. We don't really follow a recipe, but just add in what would taste good: turkey bits, vegetables, pan fried mashed potato (or stuffing) balls, spices. Let it all simmer together for 20-30 minutes and you have delicious soup! This year, I think I might add in quinoa instead of noodles.

I've never made turkey soup, but I'd love to make some with the left over from the bird this year, I've looked at some of the recipes on here but nothing I really liked.
Anyone have a good homemade turkey soup recipe? We like things a little spicy in my house so..... even a turkey pie recipe
