I am slightly obsessed right now. I've already made a baked pumpkin banana oatmeal, and I have a pumpkin barley soup and pumpkin pasta planned on the menu for next week. I've also made pumpkin butter, pumpkin muffins, and pumpkin scones.
My pumpkin patch went WILD this year, so I have tons of organic, heirloom pumpkin. I know lots of tasty things to do with it, but almost all of them involve baking/carbs, so while they are healthy, they are not dietary. Into the freezer the pumpkin has gone! I eat the pepitas as soon as I butcher the pumpkin--love those!
One thing I did try which worked well was putting pumpkin puree into tomato bisque. I used it to replace butternut squash.
I tried using Splenda to make my tried-and-true pumpkin custard recipe, and it just did not turn out well. The taste was...off...and so was the texture.
Pumpkin mixes really great with peanut butter! I make a mix with PB and pumpkin (about 2 parts pumpkin to 1 part peanut butter), pumpkin pie spice or just cinnamon, maple syrup or brown sugar. I use it as a dip for apples, French toast or crepe filling, topping for yogurt parfait or overnight oatmeal.
You can also make pumpkin mac and cheese, pumpkin muffins or bread (with peanut butter!)
I discovered this Thanksgiving French toast breakfast treat with leftover ham:
A 80 cal thin rye/wheat bread slice. 40g of lean leftover ham 30g of apple slices (the original recipe calls for apple butter) 10g of light cheddar cheese (shredded) 1-2 tbsp. pumpkin puree mixed with a sprinkle of pumpkin pie spice and 1/2 tsp brown sugar/splenda blend
"Toning" is marketing muscles to women who are afraid if they pick up a barbell, they'll leave the gym looking like She-Hulk. It doesn't happen, what does happen is you get results. Lifting Barbie weights does nothing but waste time.

Pumpkins are my favorite! I love pumpkin spice tea. Another favorite of mine is pumpkin pie smoothies (which can be super healthy if you avoid adding a lot of sugar). Also, hollowed out and roasted pie pumpkins as soup bowls.

Roasted pumpkin seeds are a great snack! Also pumpkin soup... If you would like to splurge on a not SO bad for you treat... pumpkin, fat free cool whip, 1 teaspoon pumpkin pie spice, 1 box of fat free jello cheesecake pudding mix, and cinnamon sugar on top... makes a great dip!

I found a recipe in my local paper for "pumpkin and barley risotto" - with barley taking the place of the usual rice... with chunks of roasted pumpkin or other winter squash stirred in. I am sooo going to try that....
