My pumpkin patch went WILD this year, so I have tons of organic, heirloom pumpkin. I know lots of tasty things to do with it, but almost all of them involve baking/carbs, so while they are healthy, they are not dietary. Into the freezer the pumpkin has gone! I eat the pepitas as soon as I butcher the pumpkin--love those!
One thing I did try which worked well was putting pumpkin puree into tomato bisque.
I used it to replace butternut squash.
I tried using Splenda to make my tried-and-true pumpkin custard recipe, and it just did not turn out well. The taste was...off...and so was the texture.
