Doing something labeled as "extreme" when you are just getting back into working out seems like a very bad plan and a good way to injure yourself. Of course you are frustrated--it takes time to build muscle and endurance.
Not weighing yourself for such a long period...well, that would make me VERY nervous.
I wish you luck, but this doesn't seem like a great approach.
