I think the point isn't that diet is going to cure or prevent all diseases but that diet does play an important part in maintaining health and preventing some diseases.
We all know that some diseases are going to happen. Type 1 diabetes, Rheumatoid arthritis and other auto immune diseases, some cancers and other disease are either genetic or idiopathic. Currently, there is not a proven dietary link although I have read stuff linking every know problem to food.
Type 2 diabetes, some cancers, heart disease etc are known to be caused by dietary choices as well as a genetic component.
We all know that any person who is 100#s overweight is going to be unhealthier than someone who is not overweight. We know that when we eat a healthier diet we feel better.
I would assume that being 100#'s overweight makes a person with RA have more joint pain. Or that a Type 2 diabetic has a harder time controlling their blood sugars if they eat fast food burgers and fries regularly. Or that an persons IBS flares every time they eat a pint of ice cream.
I do know that I feel better when I eat better. I love cookies and ice cream and French fries. I know my stomach hurts when I eat ice cream or fried foods and that too many cookies puts the pounds on.
