As a kid I did not like cooked carrots and cooked spinach. Now I love them. I have also added lots of vegetables and fruits to my diet that I never had as a child, like swiss chard, all kinds of squash, etc.

I definitely eat more now than I was growing up and more variety. There are something that I used to like (like raw tomatoes) that for the most part I avoid now, but there are plenty that I used to eat sparingly or did not like that I eat now (fennel, spinach, etc.).

I am not a vegetarian, but I probably could be. I love every one I have ever tried and average 10 servings a day of fruits and veggies.

Growing up, I never thought much of vegetables. It's not that I didn't like them... there were just other foods (bread, pastries, cereal & milk) that I preferred to eat! These days, I start to feel "off" if I don't get enough servings of fruits & veggies throughout the day. I try to get at least one fruit/veg in at every meal, and I definitely start getting antsy if I don't!

I've always loved vegetables! There are some I don't care for (no beets or turnips for me either). I could eat black beans at every meal. I love spinach.

PLINTHESS: Good point. "Sweet pea" is pretty much recognized as being a flower that can be toxic for humans to consume. "Sugar snap Peas" in the States are sometimes nick-named "sweet peas," but that is not a common name for them world-wide. In the States it is not uncommon to find cans of edible peas with names like "Young Tender Sweet Peas," "Fresh Cut Sweet Peas," and "Very Young Small Sweet Peas."

I hated squash as a kid, and now I can't get enough of it. I eat it grilled, in soups, in casseroles, stuffed, or just steamed. It's a go-to veggie for me now.

I used to eat way more lettuce than I do now. I prefer other greens with more flavor, like arugula, swiss chard, bok choi and things like mustard greens and beet greens. I saute them, use them as a base for salads or put them in soups.

Believe it or not ....grapes.....I used to think they would have the texture of eyeballs when I was a kid....not that we could afford them but I only started eating them in my 30's....

When i was a child i hated vegetables and ate only enough to satisfy my parents. Now i'm a vegan and i love most vegetables (turnips and beets i still can't stand!). I eat beans for some of my protein - there's a lot of great ways to prepare them.

I grew up in a family where rice and beans were a staple...I hated beans!!!
Now, I try to incorporate them in all my recipes. I eat more beans than meat/chicken.
I think part of the issue was, I learned how to make them taste amazing.
Found some great recipes at American Bean , org

I used to eat bread at every meal (even whole wheat was a favorite).
I now avoid wheat as much as possible...Beans are my starch go to.

As a kid, I was allergic to fresh fruit. I had an itching/swelling sensation in my mouth and throat. I could not eat fruit that wasn't cooked or processed...I had reactions even when the fruit was peeled. I thought it was pesticides... Turns out, I have an allergy to birch pollen.
It took time, but I slowly added fruits back into my diet as an adult.

(1) For many years I would not eat shelled sweet peas (other than a tablespoon or two to set a good example for the children) and even went so far as to not get TV dinners that had peas in them. Now, I absolutely love eating shelled sweet peas and will sometimes eat 8-16 ounces of them for a meal or for part of a meal.
(2) I use to never eat bananas. The last couple of years, if I can get them not too green but not too soft, I have really grown to like eating bananas.

(3) I use to eat a lot of lettuce, particularly in salads. Now, I eat almost no lettuce. I prefer cabbage in place of how I use to eat lettuce.
