As far as calories go, if I read you correctly, you had 6 pieces of sweet and spicy chicken
which would be somewhere, depending on size/weight, from 1800 to 3000 calories.
You had 2 helpings of brown rice, but you didn't say how big the servings were.
2 servings (cups) of brown rice would be around 430 calories.
Those two things alone would be, say, 2230 calories. Throw in whatever else you had, and I would think that would be an acceptable amount of calories for the day, although I don't know what your calorie burn is.
I agree that if you had added some fruits and vegetables to your daily consumption, your food choices seem OK, depending what was in the sweet and spicy sauce, perhaps.
