There are so many options with chicken. I like to roast a whole bird once a week. Just thaw it, rinse it, throw the innards away, rub on some olive oil and poultry seasoning and roast till done. Serve with salad.
Now for the leftovers. Cold chicken for my salads at work.
For dinner, slice up cauliflower, broccoli, carrots, onions, tomatos and drizzle with olive oil snd balsalmic vinegar and herbs and bake for 20 min at 350. Throw on left over chicken heat till hot and enjoy.
