I'm not a vegetarian...but I'm not a die hard meat eater either.
I think if you were a meat eater, it's sometimes nice to have the mouth feel of chewing on something like it. I guess that's why bean burgers and Portobello mushrooms are so popular...they seem to be the closest to meat like foods.
I have even had vegetarian cooks teach me to freeze tofu, which changed the consistency and then prepare it like chicken tenders.
