YUP! Here's how I do it. It's not going to taste exactly like fried, but it's close.
Preheat the oven to 375, with the rack in the center. Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
(For four thawed fillets) Place fillets in a bowl. Beat one egg with 2 tbsp of water. Season the way you want. I usually use salt, black pepper, cumin, garlic powder, onion powder, smoked paprika, and dill. Dredge in unseasoned breadcrumbs, panko breadcrumbs, or a cracker meal, or if you want to be super healthy, use raw wheat germ.
Bake for 10 minutes. Flip, and bake for another 8-10 minutes. Of course, cooking times may vary according to the thickness of the fish.
