I love applesauce pudding. Take 1/2-1 cup unsweetened applesauce add 1/6-1/3 nonfat instant dry milk. Add cinnamon to taste and splenda, if desired. Stir. For extra treat add slivered almonds, walnuts, or raisins, if you have the calories left.
There are pumpkin custard recipes that are really good. Try SparkRecipes. Or egg custard with skim milk and artificial sweetener.
If really only cheesecake will do, I know I used to buy individual servings of cheesecake at convenience stores. Cut in half and savor very slowly. Share or freeze the other half. I have had low cal cheesecake made with cottage cheese. Not the same.
