I make okra gumbo with no roux, just the okra to thicken it and whatever lean meats I have around. I made it with turkey sausage and turkey stock for a party last time- shortly after Thanksgiving actually. I also made baked Natchitoches meat pies with very lean ground turkey and beef.
I also have a cookbook which I love called Low Calorie Cajun cooking. The etoufee may not be like the regular one, but it is still very good.

And if you are making a desert, I have made king cake (since it is the season for it) with whole white-wheat flour, almond milk, and earth balance spread (dairy free time). I left off the frosting and went light on the colored sugar on top. That was modified from Cooking Up a Storm and it was a really well received birthday cake.

You could make little muffaletta sandwiches, gumbo, red beans and rice, macque choux (though fresh ingredients for this will be hard to come by this time of year). These all make good game day foods.

You can also lighten up any recipes by using chicken or turkey sausages (I just bought a great turkey andouille).

If anyone has any suggestions I would greatly appreciate them. I want to keep my goals set and I know it would be hard not to fall into the usual chip and dip thing. I'm making a veggie tray up, but need help with the food part. Thanks for your help!
