I like a Veggie Omelet1Tbsp of Green peppers, red peppers & Onions dry minced and reconstituted, 2 fresh mushrooms, 1 wedge of Laughing Cow Lite cheese, & 1/2 cup of egg beaters.. I have also tossed in left over veggies, like brocolli, corn, peas, etc..
