"mediterranean" chicken - boneless, skinless chicken breast with spinach, fresh diced tomatoes, capers, green olives & lemon juice with just a touch of olive oil. covered this with foil, baked on 350 for about 30 minutes and it turned out even better than expected! i love it when a plan comes together
