Last week, pressured by our house guest, Monty made different smoothies 5 nights in a row. (I'm not sure our blender has been used that much in the 15 years that we've had it.) Each and every smoothie was incredibly delicious.

Funny - our Florida weather was very much on the chilly side last week and we spent the time enjoying (icy, cold) smoothies. So this week the temperatures are warmer and challenge #11 is a nice, hot crock pot soup packed w... Mon, 11 Mar 2013 12:08:57 EST Food Challenge #10 Reveal http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5273934 This week we have a house guest...my cousin is visiting from Maryland. He likes to come down during Spring Training and catch as many games as possible. Of course I'm working all week which means Monty is forced to "entertain" and "chauffeur" him. So the challenge this week is one that won't take a lot of prep time - Smoothies. (My cousin would like the challenge to be Flan, but I think I'll save that for the end of the month when he returns with his girlfriend.)

Bottoms up! <B... Tue, 5 Mar 2013 08:35:23 EST Food Challenge #9 Reveal http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5263870 Given that our master chef is on the injured reserve list, this week's challenge is chef's choice. MIRAGE727 can pick one of his favorite recipes or try a brand new one. Just make it happen before Sunday evening and enjoy! Mon, 25 Feb 2013 20:15:42 EST Food Challenge #7 Results, #8 Reveal http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5256279 Last week's food challenge was fondue, and my honey really outdid himself. Valentine's Dinner started with a smooth, delicious cheese fondue with apples, pears, and strawberry walnut bread. It was the perfect way to start a meal - it was so good I had to stop myself from eating it all because I knew I'd be too full for the remaining 2 courses.

Next came beef, chicken sausage, mushrooms and a Coq Au Van fondue. It was amazing! It was so flavorful and I love the way fondue meal... Tue, 19 Feb 2013 13:51:44 EST Food Challenge #6 Results, #7 Reveal http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5246212 This past week has been very interesting. Yes, MIRAGE727 did ensure every dinner contained some protein. One of my favorites was his homemade pizza piled high with all kinds of delicious veggies, pineapple, and turkey bacon, and only 60 calories a slice. And the cold leftovers the next day were just as delicious. Another favorite of mine is his tuna salad with grapes and walnuts. This yummy dish saw me through 1 dinner and 2 lunches at work - I never get tired of it. And I've learned th... Mon, 11 Feb 2013 10:01:41 EST Food Challenge #6 Reveal http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5236863 Ok, I was a little disappointed last Monday - not with the food. The Scallops on the bed of Strawberry and Spinach Salad was amazing. I found myself cutting everything up into tiny bites because I didn't want the meal to end. As one of our close friends says, it was a party in my mouth! I was also happy that Monty incorporated the 2 challenges. But that also made me sad because I wasn't sure I'd see any of my other favorites for the rest of the week. And I had no leftovers for lunch. <B... Thu, 31 Jan 2013 21:12:33 EST Food Challenge #5 Reveal http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5226777 Well, I was concerned that last week would be very, very busy. Food challenge #4, Grilling, hasn't been completed yet, although I'm assured it will be tonight. (If it is, great. If not, I know it will happen when the timing is more convenient.) I do have to mention that last week was filled with several delicious meals including black bean burgers and vegetable-stuffed zucchini (using the same filling as the Cheesy Vegetable-Stuffed Eggplant). Both were awesome meals.

Thinkin... Mon, 28 Jan 2013 09:16:50 EST Food Challenge #3 Results, #4 Reveal http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5218462 This food challenge has been by far the best idea I've had in a long, long time. Three weeks in and I've had 3 outstanding dishes. The Cheesy Vegetable-Stuffed Eggplant was amazing. (Little sidebar - I first tasted eggplant at my bridal shower. Ever since then it has always reminded me of my husband. Weird, yes, but true.)

Visually, this dish was a work of art. And it was so tasty! But then I've come to realize that food that is good for me is so much more delicious than all... Tue, 22 Jan 2013 11:04:26 EST Food Challenge #2 Results, #3 Reveal http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5206315 OMG!!! Mirage's homemade pizza far surpassed anything I was anticipating. It was so healthy and so tasty - I'm just overwhelmed that he went to all that trouble, but it was soooo worth it. This whole wheat pizza dough was jam packed with homemade tomato sauce, tons of freggies (grilled spinach, mushrooms, zucchini, and pineapple to name a few), and just the right amount of mozzarella. It was cooked to perfection - I like my thin crust sturdy enough to pick up in 1 hand with none of the in... Mon, 14 Jan 2013 09:13:07 EST Food Challenge #1 Results, #2 Reveal http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5194565 First of all, I think I need to list a couple of ground rules:

1. The weekly challenge will be posted on Mondays. MIRAGE727 must complete the challenge before the next challenge is posted (or through Sunday evening). However, if one or both of us can't complete the challenge (him cooking, me eating), say because of illness for example, then special time and consideration will be giving so the challenge can be completed at a later date.

2. If one or both of us are trav... Mon, 7 Jan 2013 09:13:27 EST MIRAGE727 Food Challenge, Week 1 http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5184217 Ok, here we go. Week 1 will definitely be easy - gotta achieve the early victories to get the momentum rolling. Starting next week, the weekly challenge food, recipe, or technique will be revealed on Monday.

So, this week's food item is...pumpkin ravioli. Go for it, Honey! Tue, 1 Jan 2013 15:35:40 EST A Challenge for MIRAGE727 http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5181832 I'm very lucky in many ways. One of them is that my husband is very, very good in the kitchen. He has made countless great tasting, healthy meals, and I'm grateful for this because I have a full time job and a rather long commute. When I get home from work, I have enough time to change my clothes and relax for a few minutes, and then I'm treated to a nutritious dinner. Without my husband's commitment to a healthy lifestyle (in large part by his willingness to make dinner), I know I wouldn... Mon, 31 Dec 2012 08:36:14 EST Spiraling http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=4425870 When you're stuck in a spiral, to change all aspects of the spin, you only need to change one thing. --Christina Baldwin Sun, 14 Aug 2011 09:54:06 EST You gotta love that Florida weather! http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=4408332 So, this morning when I left for work, I was heading east on Curlew (for those of you familiar with the Dunedin/Clearwater area) and I noticed that there were very few clouds in the sky and they were higher up. This excited me as I prepared myself for a beautiful sunrise on my drive to work. I turned south on US 19 and before I reached 580 (about 2 miles) I saw the wall. I drove into a fierce rain, my wipers on high, and everyone was slowing down (that makes a statement in Florida). So mu... Fri, 5 Aug 2011 08:00:05 EST My Reward http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=3970517 I'm very lucky to have a very supportive husband. He recognizes that I'm trying to work hard on becoming a better me, and he has provided invaluable help on my journey.

This morning I stepped on the scale and was thrilled to see I had lost 3 pounds in the last 2 1/2 weeks. I planned to come home from work, work out, and relax for the rest of the evening. When I got home I found that my husband had "spit shined" our master bathtub (with jets) to reward me for my successful weig... Fri, 28 Jan 2011 23:05:48 EST Old Friends http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=3755154 On my journey to a healthier lifestyle I have come across a couple of old friends I haven't seen in years - my hip bones. I can't wait for my next discovery. Mon, 1 Nov 2010 19:24:27 EST First Time for Everything http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=3750341 I've never been a Blogger, but I'm willing to give it a try.
