CYCLINGRN's SparkPeople Blog CYCLINGRN's Blog on SparkPeople, home of free diet plans and a healthy living community Transitioning Back to Eat to Live I am keeping this blog to chronical my transition back to Eat to Live. My goal is to eat 90 percent plant based every week. Why only 90 percent? I struggle with what to eat when eating at other people's houses and at restaurants. 90 percent is a realistic goal for me and will allow me to not feel guilty if I eat a small amount of meat when eating out or at a friends house.

I would also like to lose 30 pounds. My BMI is on the "overweight" scale and I would like to bring tha... Wed, 18 Mar 2015 14:17:24 EST 500 calories and I'm stuffed! I decided to track my food for a few days to see how many calories I was getting, just out of curiosity. I ate 500 calories today and I feel stuffed! Seriously, I am so full. Here is my menu. Keep in mind, I only ate lunch and dinner today because I work the night shift. This means I sleep until 3 PM then wake up, eat lunch at 5, then eat dinner at work at 11 pm. I usually am just not hungry the rest of the night.

Lunch: 1 cup black beans mixed with sweet peppers and onion. ... Sun, 5 May 2013 23:31:15 EST Motivation During the last week, I have had friends and co-workers comment on how much weight I have lost. I must say it feels great, especially since I have been on a plataeu for a few weeks. Everyone also asks me what I am doing and I explain to them what Eat to Live is. The response that I get is, "Ooohhh, I can't give up meat." I explain how much energy I have, how much my skin as improved, and how good beans really are!! Not eating meat can seem negative but the long term effects of no meat, i... Sun, 5 May 2013 06:11:42 EST ETL Friendly Salsa My husband and I have been on a Mexican food kick. A good friend gave me this recipe for salsa and it is AMAZING. We ate almost a whole jar in one day. I mixed it into my refried beans and used it as salad dressing.

Salsa

Ingredients:
1 28oz can whole peeled tomatoes (I used salt free).
2 jalopenos or pepper of choice
2 small cans of original Rotel
1 bunch of cilantro
1/2 yellow onion
2 cloves of garlic, minced
1 tsp salt (I omitte... Tue, 30 Apr 2013 15:59:25 EST Refried Beans without the Refry I found this recipe while googling "refried beans." I made it ETL friendly and it is my husband's and my new favorite way to eat beans. I made this with pinto beans and my husband has already requested a second batch made with black beans. I also made half the recipe because I wasn't sure it would turn out...but from now on will make the whole recipe.

Refried Beans

Ingredients:
1/2 onion
3 cups dry pinto beans (or other preferred bean)
1/2 fresh jalopen... Mon, 29 Apr 2013 23:22:11 EST ETL for 6 Weeks Since January, I have lost 18 pounds which is amazing. I have not been 100 percent ETL either but on the whole way more healthy.

I would like to lose 10 more pounds by the end of June. I noticed I lose weight the fastest when I stick to ETL very strict. This means no meat and a small amount of whole grain carbs every day. I know I can lose the 10 pounds in the next 6 weeks.

I have found two amazing recipes that I will be using very frequently which my husband also... Mon, 29 Apr 2013 23:13:18 EST I Can Cook with ETL. Today I was going to make mushroom soup but found my mushrooms were bad, so I made broccoli soup. The fun part was, I made it up! It is my first recipe that I have made up. It was delicous. In fact, I am going to make it again.

I have been very liberal with the 90/10 eating plan with 10 percent being pizza, some egg drop soup, I even ate half a hamburger the other night. That being said, the last couple of days I have been getting pain spasms in my hands and swelling. I am ... Tue, 9 Apr 2013 23:53:29 EST A Neat Bean Trick On Saturday, my husband and I spent the afternoon visiting different farmer's markets and came home with some delicious spring food such as zucchini, jicama, strawberries, blueberries, and cilantro. We live in central Florida so these things are in season right now. I was reading through a food network magazine and saw a recipe for cilantro chicken. I thought, I could use those same spices and use them with white beans, so that is what I did. The white beans turned out amazing. I blended ... Tue, 2 Apr 2013 23:08:35 EST Off ETL This week This last couple of days, my husband and I traveled to the north east to check out his job offer. I did not eat ETL. I ate clam chowder, calamari, a hamburger, name it. I was definetly up on the scale this morning. I immediatly went to the store and bough a bunch of fresh vegetables.

Part of the eating thing is that I am emotionally eating. I am anxious about our decision to move and I should be coping better than eating. Errggg. Our decision to move will be ma... Sun, 24 Mar 2013 22:29:10 EST Super Immunity I just bought Dr. Fuhrman's new book Super Immunity on my Kindle. I am only on chapter two but so far it is really good. There are a ton of new recipes at the end of the book and I am excited about trying them.

I haven't lost any weight in the last week but I also ate a lot of pizza. Yesterday I made a big pot of cabbage soup from Fat Free Vegan and it is amazing. I am actually looking forward to dinner so I can eat it again!

This week my husband and I are flyin... Mon, 18 Mar 2013 16:07:33 EST Week 2 Today is week 2 of the ETL 6 weeks. Of course, it's my second six weeks. I am down another couple of pounds and am fitting into my old size 8 shorts!!!! I can't believe it. I have by no means been perfect. I ate pizza last night..alot of pizza and had a few adult beverages. However, I am still sticking to my 90 percent rule: 90 percent of what I eat is still ETL. My face is looking different and I think better.

My husband was offered a job out of state so we are going to t... Thu, 14 Mar 2013 14:53:03 EST Spring is Here! Spring is finally here where I live in Florida. This is one of the reasons I love Florida...short winters and long summers. This winter lasted longer than the last few years so I am excited about warm weather.

Of course, spring weather means spring veggies! Citrus fruits are in season in Florida until May. In season in March is asparagus, spinach, tomatoes, lettuce, strawberries, and star fruit. I got a 3 pound bag of asparagus for 3 dollars.

Fennel was on sale... Sun, 10 Mar 2013 13:10:43 EST Cabbage After a few days of eating horrible, I ate very well today. I had cabbage rolls, grapefruit and strawberries. I only ate one meal but I woke up at 3 pm after working the night shift and went back to work at 7. That is one of the side effects for me working night shift, I am not always hungry.

A few days ago, I posted a recipe on the forum for Lentil Taco Meat. I scooped some into the savoy cabbage I bought and then spooned some salsa on top. It was delicious. In fact, the l... Sat, 9 Mar 2013 01:45:48 EST Old Habits are Hard to Give Up For the last two nights, I have returned to old habits and binged. Last night I ate half of a pepperoni pizza with half of a cheesy bread appetizer. Tonight I ate a salad, beans, some fettuchini alfredo and potato chips. Blah! My feet are already swollen!

I didn't use to binge. I started bingeing when I started WW two years ago. I used to say, "Tonight I'll eat whatever I want and go on my diet tomorrow." Unfortunatly, I have not broken that mind set. I have been on ETL f... Thu, 7 Mar 2013 03:04:17 EST Pies! It's strawberry season here in Tampa, FL. I live just down the road from several strawberry farms which means I have access to a lot of ripe, delicious strawberries for cheap. I eat them for breakfast lunch and dinner. My husband requested some pies so I made two. We ate both of them! We did! Not very nutritarian at all. I did use unbleached flour and 1/2 the amount of sugar that the recipe called for.

The rest of the meals for the last two days have been ETL all the way. ... Tue, 5 Mar 2013 12:01:19 EST Goals for March I am a big beleiver in saying your goals out loud to someone or writing it down somewhere. It empowers you and adds some additional accountability. Here are my March Goals:

1: All of March follow ETL 90 percent of the week with a 10 percent variation per the ETL book.
2: Try one new ETL friendly recipe per week
3: Ride my bike twice a week.
4: Limit wine intake to 3 drinks per week.

These goals are attainable for me. I start today and have had all ... Fri, 1 Mar 2013 22:53:22 EST Curried Pink Bean Soup Recipe I was at the store and saw Pink Beans...Goya brand. I have never heard of pink beans so I thought I would try them. I made this curry recipe and it is GOOD. Super easy too.

Curried Pink Beans

Ingredients:

1 can pink beans
1 medium onion
4-5 cloves garlic, diced
1/2 jalopeno pepper
1 medium tomato, diced
1 tbsp coriander powder
1 tsp cumin
1/2 tsp tumeric
3 cups vegetable broth

Water saute onion, jalopeno ... Thu, 28 Feb 2013 17:30:11 EST Back from Traveling After being on Eat To Live for 6 weeks, I went on a vacation. I was worried about what I would eat while on the road. One thing that dissapointed me was lack of fruit. Everywhere we went had fruit for breakfast which consisted of apples and bananas. However, EVERY place we went for lunch and dinner did not have fruit. Every restaurant had steamed veggies and some kind of seafood of chicken and of course salads. One place we ate had fresh homemade grain bread. I did not eat my normal ... Tue, 26 Feb 2013 11:12:02 EST Hummus I brought a salad to work today and forgot salad dressing. I am not at the point where I can just eat plain lettuce. So I used hummus, it was storebought but it was better than nothing. It was surprising good and filling! I just took my lettuce leaves and dipped them in the hummus. I think in the future, I will do this again.

My husband said that everyone at his work is trying the Wheat Belly diet. I was curious and read about it. From what I can see you can still eat mea... Tue, 19 Feb 2013 23:39:00 EST I'm getting happy. Today I made enchiladas for everyone at work. They had chicken and cheese in them but I left out any oil and salt. No one even noticed and everyone loved it. Not very ETL friendly but it's ok.

I am down to 154 which I am happy about. I think my weight loss is slowing down but it could be because I am 15 pounds away from what Dr. Furhman's calculations state is my goal weight.

The last couple of days, I have not been doing ETL perfectly and am just staying the same... Tue, 19 Feb 2013 01:25:40 EST A Bit Hasty In my excitement over my weight loss of 15 pounds, I made some bad food choices in the last few days. Today I was up two pounds but attribute it to the amount of water I drank last night.

Last night at work, we ordered out and I ate some spicy chicken fingers. They were LOADED with salt. I bet I drank a gallon of water last night after I ate the chicken. I have felt bloated all day and my fingers are swollen! Oh well, my new thought is, I'm not perfect and I'm moving on. I'm... Fri, 15 Feb 2013 22:24:43 EST Mushroom Onion Miso Soup I ran to the grocery store to get more lettuce and I saw some Baby Bella Mushrooms. I have never had these mushrooms before but I suddenly had a weird craving for some. I made a very quick, AMAZING soup.

Mushroom Onion Miso Soup

Makes 1 serving

1/2 onion
handful of baby bella mushrooms (or to taste)
garlic
2 tsp miso
1 1/3 cup water
1-2 tsp of wakame
1 tsp Braggs Aminos (or to taste)

Saute onion and garlic in 2 table... Wed, 13 Feb 2013 17:11:26 EST New Clothes I went to Kohl's yesterday to look at some of their sales. My clothes are hanging off of me which is awesome! I realized that I since I still have 15 more pounds to lose, that I should wait to buy clothes. What I did, was buy new accessories to hide my baggy clothes. For example, I bought an eternity scarf which will hide baggy shirts. I bought a wide belt to wear around a black dress I have. I spent a total of 20 dollars.

My husband said that when I get to my goal weight,... Wed, 13 Feb 2013 14:23:36 EST 15 pounds gone! I am down 15 pounds now. I feel great and really happy. My skin has a rosey glow to it, I'm energetic.

My husband is out of town this week which usually means that I spend a night watching chick flicks bingeing on my favorite foods and drinking wine. Last night I watched some chick flicks while drinking some tea and eating a grapefruit. It was delicious! I have found that I can't tolerate alcohol anymore. I can have one glass of wine and that's it. More than one and I ... Fri, 8 Feb 2013 16:53:47 EST Healthy ETL Caesar Salad Dressing!!! First of all, I just today realized that no one could comment on my blog! So I changed the settings, I would love comments!

I made this Cesar salad dressing I found on the ETL member's site. Wed, 6 Feb 2013 17:13:05 EST Fruit Yesterday was the superbowl and I pigged out! My husband wanted "football" food so I grilled shrimp, and made tater tots and some other things. I also drank a lot of beer. I feel blah today. Luckily this did not stall my weight loss. I woke up craving an orange. In FLorida, this time of year, we are lucky because we get fresh citrus and fresh strawberries.

Menu today:

Breakfast/lunch: honeybell orange, beans with peppers, salad.

Dinner: strawberries,... Mon, 4 Feb 2013 17:36:17 EST I Don't Like Salt After All! This is my third week on ETL and I feel amazing! I have lost about 12 pounds. My skin is softer, and well, I just feel sexy!

My clothes are hanging off of me which is probably due to the 2 inches I have lost off my waist. I am learning to like a lot of beans and learning to expand my palate and try new veggies.

I have noticed that when I eat salt, I don't like it! After working the night shift, in the morning, my feet would swell up. When I would wake up from s... Thu, 31 Jan 2013 15:45:16 EST Doing Good and White Bean Soup This week started out a bit rough but got better. I am now down 13 pounds. I am 12 pounds away from my goal weight. It feels good. Tue, 29 Jan 2013 13:24:45 EST This Week is a Rough Week! So far this week has been tough. Even though I work night shift, I am able to swing back to being a day person on my days off. The last week has been difficult. On my days off I have been staying awake to midnight or 1 am, then I won't wake up until noon! Yesterday, I woke up with a sore throat which explains everything. My body has been trying to fight off something. This is not surprising. Most of the patients I have been taking care of have had the flu or a cold...I have been sneeze... Sun, 27 Jan 2013 15:41:51 EST Experiments The last few weeks have been great. I have lost a total of 8 pounds so far and I feel great. I have also been exercising with my Zumba Wii workouts and riding my bike. My waist size is down one inch. Yesterday I put my jeans on and had to buckle the belt with a tighter loop! My husband says I look great and he can see a difference.

More importantly, I don't feel sluggish all of the time. After I eat dinner, I don't feel bloated or gross. I never get sleepy after a meal. I ... Wed, 23 Jan 2013 11:13:01 EST Salad for Breakfast? This morning I woke up and had a craving for I had one, for breakfast! I have never done it but it was delicious. I also had some black bean soup and strawberries and herbal tea. It was VERY satisfying.

I love this plan! Wed, 16 Jan 2013 13:55:06 EST Lentils and Rice The other day at Whole Foods, I bought a bag of mixed brown rice, red lentils, and wild rice. I decided to pair it with some mexican spices. It turned out very tasty. This would be good wrapped in a tortilla. My husband liked it! I added the spices suitable to my taste can definitely add more!

Mexican Lentils and Rice

1 cup mixed lentils/rice
1 teaspoon chili powder
1/2 teaspoon cumin
1 teaspoon onion powder
1 garlic clove, minced <BR... Tue, 15 Jan 2013 17:56:42 EST Beans!!!!! Today my husband took me to Whole Foods to buy some beans. We are both wanting some variety other than black and kidney beans. Seventy dollars later, we now have a whole pantry of awesome beans! Northern beans, cannelini beans, fava beans, adzuki beans, and a new kind of bean...anasazi bean. We have no idea what anasazi beans are but they are very pretty to look at and we grew up in the southwest so we thought it was interesting. We also found some wild rice, red lentils, black lenti... Sun, 13 Jan 2013 16:36:28 EST Back To Business After eating bad yesterday, I have been eating healthy today so far. I also made myself some Teavana Acai t ea which is supposed to have antioxidant properties. Not sure if it truely does but it sure tastes good. I am getting used to tea without sugar and am enjoying the new flavors.

I also enjoyed the Refried Bean Soup that I craved last night while at work, very immensly for lunch. Here is the recipe:
-refried-bean-soup.html. ... Sat, 12 Jan 2013 16:27:44 EST Week 1 Today marks the first week on the ETL diet. It was a bit rough, I won't lie. I had a lot of cravings for carbs. Last night, I ate some pizza. However, I still managed to lose 5 pounds. My goals is to lose 20 pounds so 5 pounds is awesome.

Strawberry season is just starting here in Florida, so I have been eating oranges and strawberries. I find that I enjoy herbal teas much more than coffee. I am still having some wine every evening so my goal this week is to cut back on th... Thu, 10 Jan 2013 12:18:43 EST Day 2 Yesterday was my second day on ETL diet. It was HARD. All night last night at work, I had crazy cravings for carbs...chips, fried name it. It made me kind of cranky. During my lunch break, I read my favorite excerpts from ETL to remind myself why I don't want to eat that stuff. I also had to remind myself that my body is addicted to those foods but does not need that food since it has low nutrients. Instead, I ate my lentil stew, salad, and steamed green beans. Amazingly ... Sun, 6 Jan 2013 13:33:55 EST Eat to Live I started the Eat to Live way of eating. I found the book by browsing the New York Times Best seller list, looking for something new to read. The book makes a ton of sense. The one thing that stuck out at me the most is that our body should crave nutrient dense food such as fruits and veggies...not fast food. Our body does not gain anything but fat from cheeseburgers. I learned what a food addiction craving feels like versus true hunger. I want to treat my body better and get healthy. ... Sat, 5 Jan 2013 14:23:06 EST Mini Brick Today I did what is called a brick but I am calling it a mini brick. A brick is where you ride your bike and then run. After riding your bike, your legs are supposed to feel like bricks when you run and they sure did! I ran a mile and then rode 6 miles. I then came home and sat on the couch for 2 hours just to recover! I am pretty sure I burned about 800 calories. I also felt great...I felt a sense of accomplishment. I am actually looking forward to going out tomorrow and doing the... Thu, 13 Sep 2012 12:57:07 EST Change In one month I am going to turn 32. Every birthday, I tend to reflect on the last year and this year I need some changes! The first part of this year, I was doing very well and had lost a lot of weight and a few clothing sizes. After the death of my grandparents whom I was close with, I have been depressed and ate and drank a lot and gained 10 pounds in one month....WHOA!!!!! It is time for a change. Enough with wallowing and being sad!!! I have to focus on what I love which is zumba an... Tue, 11 Sep 2012 16:46:43 EST
