I made lots of things I like and I think my family liked most of the meals. I made black bean burgers (with baked fries) for the first time and mini quiches (out of chickpea flour and veggies). I also made a rice salad, taco salad (with baked chips and seasoned beans), and a lentil salad. I also made corn relish, salsa and sweet and sour cabbage to add to the meals. I'm a little jealous of people losing an average of 10 pounds a month (no oil, plantbased average) b/c I'm more like 3 or 4, but I'll take what I can get. I've been no oil, no sugar, no added fats for 5 months and have lost almost 20 pounds which makes me very happy. This WOE is working for me. Reading up from different sources, I found that many experts recommend nuts, seeds, avocado and other calorie dense food be cut out of your diet if you're trying to lose weight and it's not happening. This morning, I cooked up some leeks in broth. Then I added a head of cauliflower, some sliced garlic cloves, a chopped zucchini, and a few yukon potatoes along with veggie broth. I found a recommendation to slice it and cover it with boiling salted water for 15 minutes before drying it and cooking it. It really did make for better, drier tofu slices. I made the mini sized muffins and used considerably less oil than called for. Next I will have to find some lower sugar recipes. I made morning glory muffins yesterday with whole wheat flour. My favorite current fruit to use in smoothies is the cranberry. I love the assertive tart flavor. This week I lost 4 pounds which is the most I have ever lost in 1 week (aside from 1st week of weight loss). I love how motivating it is to have a big weight loss. So...I added my weight training back in. I'd stopped doing it regularly when I started swimming as exercise. Now the pool is closed for repairs so I figured I should put it back in to my regular schedule. I also lowered my calorie count by about 200 or so calories/day. I've always liked the elliptical machine and the bicycle and have done those in the past, but I've started adding in some time on the treadmill. I don't walk really fast, but I like to use the incline. Where I live it is mostly flat, so I don't get as many hills in as I like if I'm outdoors.
