homemade vegan cheese

Saturday, September 06, 2014

i have been looking for healthy alternatives for snack food for my kids and came across this recipe for a vegan cheese dip
minimaleats.com/vegan-ch
eese/

now i can´t say if this is the best vegan cheese as it says in the recipe as to be honest i have never eaten a vegan cheese so i have no comparisment. to be honest i was a bit disappointed as to me it didn´t taste like the cheese i know and love.as most of my spark friends will know cheese,is my downfall,my kryptonite,my trigger whatever you like to call it.i love cheese and had hoped to find a healthier alternative .that doesn´t mean it wasn´t tasty it was just differant than i thought.first if you look at the cheese in the link it was a deep yellow and runny mine looked like this

in the food processor i even doubled the amount of lemon juice and water given in the recipe.in total it made a small jar and the bit in this bowl

even though it wasn´t as thin as the one in the link i kind of liked the texture and consistancy as it was similar to a humus.i find with the amount of seasoning they gave that it was a bit bland for my taste and i knew my kids wouldn´t eat it like that but by adding more garlic and cayanne pepper it was ok.i tried to figure out why mine was so thick compared to theirs when i had doubled the liquid.the only reason i could think of if the nutrition yeast i used as both i and the shop assistant in the reform house weren´t certain if we had the right stuff but reading the nutritiant value on the packet we came to the conclusion it was the same.here is the german equivulant i brought

if any of you know any differant let us know as i like experimenting.guess at some point i am going to have to try a vegan cheese from the shop to see if this recipe is really for the best vegan cheese or not.if it is i am sorry it would never take the place of normal cheese for me but as an occasional alternative will go.well mickey hope this helps love as i know you wanted feedback from this recipe.it tasted nice with tortilla chips and with blanched bobby beans but i didn´t like it much with carrots.weather that is because carrots was in the recipe or not i couldn´t say but don´t forget we all have differant taste so you might like it with carrots.

anyway thanks as usual for reading my blog and a double thanks if you reply.take care and keep smiling

Hiya Karen, I must say as someone who has been vegetarian for 15 years and Vegan for 3 months (haha a whole three..) Vegan cheese scares me because I know and love the real deal! ...That being said even if you were disappointed you get major credit for at least trying something I as a vegan, with many a vegan cookbook cannot do yet! I have seen Vegan cheeses in places like Reformhaus if you still want to give them a go...just have your Euros ready!

Thanks for sharing!!! I love cheese, too. I tried the store-bought. It wasn't too good.
I have made a lasagna-like recipe where the cheese was very similar to mozzarella. I'll post it in the group.

And thanks for the pics, too. I take pics, but never get around to posting a blog. I wish you could put pics in when you post..... Oh well.

thank you for sharing - although i had "given up" cheese for several years after going vegan, i found that it is also my trigger food when jumping off the wagon. that recipe looks like "queso" - a drippy cheese that you put on chips. i'd like to give it a try too!

THANK YOU for sharing your experiences! I want to try the recipe but I don't know what 'nutritional yeast' is either - 'Hefeflocken' - I might be able to find that as I live close to Germany! emoticon emoticon

Looks great! And you did it! Sorry that you feel bit disappointed in taste. You think the key is the nutritional yeast? Taste may bit off for you but for sure it is good for you and your whole family member.

Good for you! I keep wanting to experiment with making things like that; but I'm afraid I will end up wasting the ingredients if it doesn't come out good!
