Good morning, Sparkpeople!

I have been getting on my treadmill for a mile each morning and a mile in the afternoon. My back still hurts but I can do short slow stints. Today we went into town and did 3.5 slow miles on our city trail.

I am still cooking a lot of new Whole30/Paleo recipes and enjoying them immensely. I am learning so much! I haven't bought full-fat mayo in 30 years, yet I discovered I am WAY more satisfied with 1 tbl. of my homemade mayonnaise than I ever was with 3 tablespoons of the low calorie "fake" stuff.

Last night I made tuna cakes with mashed sweet potato as the binder rather than bread crumbs. What a nutritional boost! The flecks of sweet potato looked like cheese so TC loved them, said they were very flavorful, and never knew he was eating freshly mashed sweet potato. I'm going to try that recipe again but substitute canned pumpkin to see if that's just as good.

    Glad you're taking it slow with the treadmill! I've never heard of using sweet potato to bind tuna cakes. I'll have to give that a try! Thanks for sharing! emoticon

    I guess I missed your back being hurt - take care and be sure you don't over do it!!

I like that idea of a sweet potato as a binder. I'll have to remember that the next time I need bread crumbs.
