Try freezer cooking! If you have the time one day a month, cook up a batch of freezable dinners and put away. The day before, take one out to thaw, and then it is easy to pop in the oven for no fuss. I always keep breaded chicken, healthy burritos, or other individual servings handy too in case a picky eater is present. It also helps for leftovers the next day for lunch.
It can still be hard if you have eaters with different preferences, but I find that it takes the guesswork out of weeknight meals for me. 736 days ago
