This whole foods diet has been a challenge!

I've been pouring over recipes on Pinterest and various Paleo blogs looking for recipes. I don't want to buy a lot of expensive ingredients that I may not use going forward, like the soy sauce substitute "coconut aminos" that I paid nearly $8 for at the health food store.

Yesterday I made something called "Egg McNothin's" which will be great for breakfast! Talk about easy and delicious!

I also made a beanless "chocolate chili" which is rich and delicious. I'm going to eat that with sauteed greens for lunch.

And finally, today I will be making Creamy Salmon and Leek Soup.

Today my new treadmill arrives! I'm really excited!! emoticon

    That recipe does look good. I will be giving that one a try. I love breakfast as well (plus lunch and dinner!!!) If I can have pre-made dishes like this one it really helps me control my calorie intake.

    Thanks for sharing the recipe. I've actually tried these before but I sort of stirred my eggs a little. I only like the yolk sometimes in a boiled egg. Have fun putting your treadmill together. I can't wait to hear how you like it!! emoticon emoticon

    I love hearing of your dietary challenges. I've just been phasing processed foods out of my diet and finding what works for me.

    That is a great breakfast muffin. I also was shocked at the coconut aminos cost. I have gone back to using tamari.
How fun that you will have your own treadmill!

I hear you about the various strange expensive ingredients. Give yourself kudos for being adventurous, you food sounds divine.
