Whole30, Day 9 (Saturday)

Made a new recipe that was AWESOME! It is Paleo Pad Thai, and here's the link:

I did not use chicken thighs; I used a small chicken breast. I did not use spaghetti squash, I used a 12-oz package of angel hair cabbage. I also upped the amount of onion and snow peas because more veggies means more food!

It made a huge pan full; my hubby had half, I had 1/4, and was going to save the other 1/4 for lunch...but someone went back for seconds and I didn't have the heart to tell him HANDS OFF!


It was easy to make because you make the sauce, cook the chicken, and steam the cabbage ahead of time. Then it's basically just sautee everything together in the sauce. It was totally YUM and I didn't miss the noodles at all!

It is 6:15 AM and we are getting ready to leave to walk on the city trail. *sigh* it is already 70 degrees out. Going to be another steamy one. Happy Sunday, Sparkpeeps!

    Steamy here too -- that's the price we pay for living in Paradise whilst others are cursing the snow and ice. I gladly pay it every year!

    That sounds great! I'm thinking about changing over to the Paleo way of life to see if I can get rid of my migraines. What inspired you to make this change to whole foods?

    My Pad Thai has a lot of weird ingredients, like tamarind paste and fish sauce and dried shrimp, ingredients I acquire from the Asian grocery store.
