Whole30, Day 2

Had another awesome day yesterday. Can't believe how NOT hungry I am.

I made the Avocado Ranch Dressing and it was good, but it had a whole can of full-fat coconut milk in it (600 calories). I thought it would be VERY calorie dense but it isn't -- only 27 calories a tablespoon. It does have a coconut taste, which I'm not used to. Next time I will swap out some of the coconut milk for olive oil. It has a good texture and all in all I'm pleased with it, but will try a different recipe next time.

Here's what I ate yesterday:

Breakfast: two egg omelet with spinach, mushrooms, and onions; 1 cup chunked watermelon

Lunch: See for yourself!

1 can tun with olives, paleo mayo, a tomato and celery, hard boiled egg and two cups chunked watermelon I forgot to take a picture of.

Dinner: side salad with Avocado Ranch dressing, 6 oz. oven fries (white potatoes), 4 oz. Laura's lean beef pattie with lettuce, tomato, pickle, onion and sauteed peppers

For a snack I had 1 cup of frozen grapes and a hard boiled egg.

It seems like a lot of food for 1200 calories. I need to up my calorie count so I'll work on that. So far so good!

Yesterday's gift from our 93-year-old neighbor with the biggest, most beautiful garden you'd ever see! YES, two pieces of homemade pie in the rear, but they both for TC. Gotta love that woman!!

    That's some good looking food and some good looking produce.
Great view from your place.
We hiked at the beach yesterday to see the sunset and the super moon, but wouldn't you know it, it was cloudy at the beach so we couldn't see either. Try again tonight, this time from the mountains.

    The food does look really good! I was craving tuna today and did not have it since I was traveling and had to pack something portable. After seeing yours....on tomorrow's menu for sure.

For Whole30 and Paleo in general, it is the make up of what you eat as opposed to the calories, fat, etc etc. I have days when I eat Paleo approved foods but more fat than I am used to, and the scale is down the next day! (and stays down). I am trying not to stress out about how many calories I eat or the amount of fat, and just eat the good stuff. I do measure and record everything though. It is a tough change in diet mentality for sure!!

Keep it up Nanette!! You are doing awesome!!!
