Adapt and adjust

Breakfast is my favorite meal of the day, it helps set the tone.
That being said, an egg without yolk is like an oreo without stuff.
It's a good thing I have some room to maneuver this morning!
Add a nice slice of sweet red pepper to frame my egg whites, a couple kernels of corn, and a few beans, with some fiesta dash. (The veggies are borrowed from portions for other meals.) Add a piece of toast, a little fruit, a good cuppa, and this day holds promise. (if you aren't careful, heart healthy diets can just break your heart!)

    I love eggs but the Jury still seems to be out on if they're healthy enough to eat lots of them. I try to use egg beaters, usually my market's generic brand and mix the eggs, veggies, shredded cheese, seasonings etc. and put it all in a ziploc freezer bag, then mix it (in the bag with my fingers) and boil the freezer bag in boiling water. It's more like an omelet than scrambled eggs and I love starting my day with this delicious omelet and maybe a piece or two of toast.     Sounds great to me. When I do an omelet (we have them with veggies a couple times a week), I use one whole egg and 2 egg whites. Gives it a little color and there is some great protein and iron in there, too. Anyway, like Jeanne said, it is great to be able to do what we want, right? Today I had 2 pieces of toast, 1 egg and 1 small piece of cheese. It came to 260 calories. Had a cup of watermelon and I was in heaven!! Mmm!! Have a great day today!! Jeannie

    You are not alone! I prefer egg white too. but I end up eating the whole thing emoticon But I do not eat eggs very often. My go-to is greek yogurt. Thank you for sharing! emoticon

    We are all so different and I guess that's one of the things that make this site so special. I just finished breakfast: egg whites with a slice of dry toast. As a kid, I would get in trouble because I hate the taste of the yolk. My mother would make eggs and I'd just eat the whites. She would fuss about the food waste. This scene replays in my head most mornings, if I'm cooking eggs. How nice now, as an adult, to be able to make a healthy choice and enjoy what I eat. So happy you are here. Thank you for sharing!
