It's a dilemma when I get back from my pool sessions. We go in the evening straight from work, in the water at sixish, out at eight, then a quick drive home.
We have to eat, usually it is something easy and light, and as quick as possible soup and salad. If it's more than that, it take too long to cook, then I am energized and want to stay up late, then late to bed and late to get to sleep and late to get up for work....
Last night it was homemade vegetable soup and coleslaw, both prepared on Tuesday. Both much tastier with a rest in the fridge before eating.
It is great to be back in my routines, food prep on Tuesday really helps with my vege intake and just generally makes life easier. Less waste too, on Tuesday I make soup from offcuts from vege prep. I think I might start packing my lunches ahead, too, so I can just grab and go.
Anyway, after tidying up it was 9pm and I took myself off to read in bed. Early, I know. But I had a good night's sleep. All five hours.
Thank goodness for my iPad, kindle app and Sparkpeople to keep me on track. Read a little, spark a little, plan my weekend, pay bills, make a start on a project, all before I get up.
