I wanted something different so I browned some chicken parts, added chicken broth, covered and simmered that down. Then I added lots of coarse ground black pepper, minced garlic, oregano, fresh chopped onions, green peppers, and celery.
I cooked this about 15 minutes more.
Then I added a small can of sliced mushrooms, and a regular can of diced tomatoes in juice. I thought about adding thyme and ginger, but changed my mind. (everything doesn't have to have an island flavor!)
So that's my protein and vegetables! emoticon Does anyone know what this is?

PS. Who needs rice? emoticon

    I think someone had it right when they said it sounds yummy. I almost thought it was going to be a stir fry, then you put soup & tomato's in , and it turned into a stew.
If I had made it I would have put the tomatoes into it in the beginning so that I would have as much oil in the cooking. I would have removed the skin & dipped it into egg white, then plako rice to coat either in till kind of Krispy maybe it needed to go into the oven, or fry it on slightly till skin seems brown-top of the stove. Then afterwards I would mix it in the mushroom soup with the chicken, and lay on top of the vegetables & bake at 350 covered. I think this sounds like a very tasty recipe.

    Your "creation dish" sounds yummy in the extreme! emoticon

I don't believe that rice was necessarily called for; however, I would like a bit of brown rice, just to stretch the dish into more servings. That would be classified as "An Ima thing!", don't you know? emoticon

    Who needs rice indeed? It took a while to get used to only seeing two things on a plate instead of three, but as long as you're satisfied, who cares?
