I was reading a post that Jen had written and it was about how she prepared for a party in a very healthy way. The food sounded so delicious. It just proved to me that you can eat healthy and still entertain, make dishes that taste good and look good too.
I wasn't as creative and didn't have to do a lot of different items, but I started small with one thing. It was warm and I wanted something light for dinner, so I made what I love. I like to make things that don't require a lot of preparation and usually can be done in one pan, bowl or plate. When I finished this - Vince thought it looked so pretty, he took a picture. Basically, it is Romaine lettuce, pickles, olives, tuna, sliced ham, cucumbers, cheese, tomatoes, avocadoes, spinach dip and hummus. I don't eat dairy, so I didn't eat the cheese. He used crackers and I used lettuce leaves, but together, we had an easy, fun, healthy meal. I was proud of how it turned out and we even had left-overs for the next day.
