A Way for ME to eat more Fruits/Veggies

Just because all these things appeal to me doesn't mean I'm good at eating them! I find myself in a rut sometimes because I tend to eat many of the same things, day after day. Sure, they are all healthy, but sometimes it's hard for me to get enough of the dark green veggies (folate) and other than the lemon I squeeze into my water and the banana I use in my protein smoothie -- I find myself failing to include them.

The emoticon finally lit up in that dim area of my brain, and I thought to myself yesterday -- why not try putting some of the things you like, but don't eat, into the blender and see what comes out? And I did! In went oranges (3) right off my tree, I peeled them and sectioned them, next about a 1/2 cup to whole cup of strawberries, then I added an apple, cored but not peeled. Feeling brave I put in 1/3 of a very long cucumber I had just bought, peeled. Some I looked in the refrig to see if there was something else I could add and found a half tomato. Put it in, turned on the VitaMix, and swoosh - it all became liquid. I drank a glass of it, feeling quite healthy, and it tasted delicious. Poured the rest in a pint jar -- filled it to the top! I looked at it today, lunch time and found it had settled itself into a sort of pudding type of consistency, so I had what was left (some went into my protein smoothie this morning) along with a Greek Yogurt (5.3 oz size).

Feeling quite thrilled about some of the stuff I'll be able to sneak into the blender as I make my smoothies -- and I can just see those oranges disappearing off my tree! It's such a shame to have them and not use them.

I make those smoothies a lot but decided don't really like the cucumber in them everything taste like it then so only use 1/4 of it now but do like that I am getting my fruit and vegs in that way and blending them all up make it a little thicker and I can eat it if I want then too - so keep up the great work getting your vegs and fruits in

    Good Idea emoticon
Our new house has a bunch of fruit trees, we're not even sure what all of them are yet but sure have received a lot of guesses from different people. Once they start producing I'll be looking for ways to use them up, "Put it in the blender and see what comes out" could work emoticon
