What I Ate Wednesday....

Breakfast was coffee with Silk creamer, a whole wheat wrap with veg/chickpea/tofu scramble, spinach and 1/2 a Tofurkey "sausage", and some strawberries. I've been buying a flat of strawberries every week for the last few weeks because they're so perfect this time of year!

Lunch was 2 homemade black bean/sweet potato patties with salsa, soy sour cream, and avocado, over a thick bed of spinach.

Dinner was a cauliflower crust pizza [love these!] with tomato sauce, a little vegan mozzarella, and broccoli, over arugula. Dessert was more lovely strawberries and a nut/miso stuffed date.

Seems like I'm having everything with greens these days, I actually crave them! Also, I'm liking just eating 3 times a day. I've been following Dr. Joel Fuhrman's Eat To Live diet plan and it's working for me.

    Thinandfit, I do eat only organic soy and soy products that are specifically labeled non-GMO. I use them only as accents, they're never the main course. I love soy! I don't have any protein worries being vegan. Don't worry, I've been at this for a long time! LOL
Exercise program is right on track. Yesterday I did a good sweaty strength training routine!

    I caution you to eat only organic soy products. Soy is a GMO product and therefore indigestible.

Plant based is the best and you seem to have a handle on it. Personally not only do I stay away from soy - allergy! - but I don't eat quasi-protein. There's enough calcium and protein in plants themselves to stay away from soy and other questionable edibles, LOL If you eat enough you get enough of everything you need with plants.

Are you weighing/measuring/tracking everything? How's your exercise program going?
