Breakfast was coffee with Silk creamer, a whole wheat wrap with veg/chickpea/tofu scramble, spinach and 1/2 a Tofurkey "sausage", and some strawberries. I've been buying a flat of strawberries every week for the last few weeks because they're so perfect this time of year!
Lunch was 2 homemade black bean/sweet potato patties with salsa, soy sour cream, and avocado, over a thick bed of spinach.
Dinner was a cauliflower crust pizza [love these!] with tomato sauce, a little vegan mozzarella, and broccoli, over arugula. Dessert was more lovely strawberries and a nut/miso stuffed date.
Seems like I'm having everything with greens these days, I actually crave them! Also, I'm liking just eating 3 times a day. I've been following Dr. Joel Fuhrman's Eat To Live diet plan and it's working for me.
