Unless the number was wrong, I suspect the spike at noon came from the carbs in the young coconut water. I'll switch to eating just the coconut meat and save the water for after meals. It looks like carbs on empty stomach is like drinking alcohol on empty stomach. Today, I also had a banana after lunch, but no spike. I think it's the fat from avocado that lessens the effect. So it's beginning to look like eating more fat is the answer. Also the high numbers at night could be the effect of cortisol, the stress hormone, or it could be from the dates. I'm just developing the theories as I go along.
Mid morning snack: Goji berries and young coconut.
Lunch: Squid for protein. A banana is hidden in the pic.
Dinner: Eggs in broth for protein. Avocado on the left, apple on the right.
