    Mmmmm, I love quiche for a light meal, with salad on the side.

A trick from my youth - lightly pan fry zucchini or yellow summer squash slices and put in the bottom of the pie pan, then pour your egg mixture on top - the vegs act like a crust and keep the quiche from sticking, you don't get the crust calories, and it adds more veg to your meal!

    Susan, you can use real eggs, l have, but count each egg as 2 points that's why I use the egg beaters. Can't tell the difference. I don't know how many eggs makes a cup. Probably 4 at least and then that is 8 points added to the recipe.
