Today's 1 Good Thing was creating a tasty meal in 10 mins

I had been at work today and realised I didn't have a plan for my evening meal when I got home. I'd been around people making their meals and I was hungry. The likelihood of eating something 'bad' was quite high - so on the bus journey home I really thought about what I could make which would be satisfying, but 'good'. I got home and shredded up a head of green cabbage which I put on to steam, then I made 'eggy bread' croutons with one egg beaten with some curry powder - and one slice of granary bread cut into squares - which I fried (yes, fried) in a little butter. So - a huge pile of cabbage, with a couple of cloves of garlic crushed on the top, a bit of black pepper and a drizzle of chilli olive oil, topped with the crispy curry croutons - it was the biz! I wasn't counting calories, but the large amount of cabbage was a definitely good choice
