Spent most of yesterday preparing for a dinner party. You would think I would get more steps in running up and down stairs putting things away and getting serving plates out of storage but that isn't the case. I taste while I'm cooking so I have no idea what I actually ate yesterday. At least it was a Tuscan style so there were lots of vegetables.
Getting my menus together and with some of the leftovers there's going to be some tasty breakfasts and lunches. The roasted red peppers with capers will become a wrap with the leftover roasted chicken. The wild mushrooms in wine and garlic will be with an omelet or scrambled eggs. There will definitely be chicken stock because I have two carcasses from 2 roasting chickens. I'll likely do that today. Add some kale or chard, carrots and some tiny pasta and I'll call it minestrone.
