Taco Soup

Friday, April 25, 2014

Hello Sparkfamily! Soups on! Take a peek!

1 lb ground beef, browned and drained.
1 quart jar canned tomatoes or 48 oz. stewed tomatoes, blended
1 can black beans
1 can pinto beans
1 can great northern beans
1 can ranch style beans
1 can kidney beans
1-2 cups corn (canned or frozen)
1 packet taco seasoning

Sour cream, cheese, avocado, and chips for garnish.

Brown beef in a large stock pot. Drain. Add all other ingredients. Simmer 20 minutes or until ready to serve. Garnish as desired. (I told you it was easy!) Enjoy!

Thought of the day~ We've all got embers within us that need to be blown into flame and what better wind than praise and compliments to do just that? Compliment someone today! Have a healthy day! Hugs, Rose:) emoticon

This is going in the cookbook for my GD, Summer. Four weeks from tomorrow they will become Mr. and Mrs. They will substitute tomato sauce for the canned tiomatoes.

Your recipes are awesome! Sure appreciate all the recipes you share.

I make a version of this, too! I use:

rotisserie chicken, diced up

cumin, onion and garlic powder (instead of the taco seasoning with lots of sodium)

chicken stock

poblano peppers in adobo (2-3)

diced onion

I let everyone add their own toping (greek yogurt, sour cream, green onions -- whatever the spirit moves!)

How true - doesn't cost anything to give a few kind words of encouragement and praise!
The soup looks yummy - kinda like a more watery chili?
