Today I was blanching some collard greens before going to Easter dinner at my in laws and the leaves looked so beautiful, and fresh- the very essence of that spring feeling we are all starting to get around this time of year. It made me think.. hey why don't we enjoy more of these vibrant whole foods that embody the spring vibe more often rather then overloading on so many traditional things that are less then colorful? It would be healthier if we devoured the rainbow of fresh veggies that most of us in north america are so lucky to have access to all year round. Not that I don't enjoy traditionally Easter themed meat choices and plenty of eggs with rich bread and pastry! Of course I do. I just think what the meals' real theme is is fresh, fresh, fresh. I have never understood why most people stick to that boring turkey meal that they just enjoyed during Christmas.
Now that the nice weather is here I have also been outside more often throwing the ball around, walking and rooting around in the garden tentatively..
I would hate to jinx it but I think my metaphorical "leaf" is began to turn. Wohoo. New habits are the breading ground for lasting success!
