Breakfast was a chickpea flour omelette with broccoli, onions, tomato and a tbsp. of cashew cheese, with sweet potatoes and a lot of asparagus on the side. And coffee with Silk creamer.
A couple of hours later I had 2 little clementines.
Lunch was a big salad of spring mix, broccoli sprouts, onion, red pepper, grated carrots, cucumber, avocado, and 1/2 cup warm lentils, and 1/2 cup herbed zucchini and tomatoes.
Felt a little left out today hearing about everyone's special occasion Easter treats, so treated myself to strawberries and 2 tbsp. of chocolate sauce. My secret recipe for chocolate sauce is simple: 1 part maple syrup to 1 part cocoa, maybe add a little vanilla!
Dinner was 1/2 cup of homemade granola, with strawberries, kiwi, mango, and pineapple and I added 1 tbsp. cacao nibs. Very satisfying, and pretty!
