South Beach Diet -- Day 8

Day 8! I can hardly believe it. When I woke up yesterday morning, my throat was sore and scratchy. I felt kind of blah all day yesterday. I woke up this morning and felt a bit worse. I got myself ready for work, took some medicine, and went to work. It was cold and rainy all day. UGH! I hate working when I don't feel well. The day itself was ok though. I trudged through. I made it. I went to my weight loss meeting this afternoon with my SIL, and I'm happy about that. We talked about what we've been doing that's working, and gave each other support to keep on truckin'. She keeps saying "this is our year," and I really hope it is!

So, here's the rundown for today.


Day 8


Breakfast: glass of spicy V-8 juice. (I didn't feel well and wasn't even a little bit hungry).

Lunch: turkey-cheese roll-ups, pickle spear, string cheese, skim milk.

Dinner: "fried" cabbage with turkey sausages. I found this recipe on Facebook, and this is not my picture.

**Recipe** 1 stick butter or margarine 1 small head of cabbage, chopped 1 small onion, chopped 1 lb smoked sausage, sliced into round pieces 1 (15 ounce) can diced tomatoes or rotel tomatoes 1/2 teaspoon salt 1/2 teaspoon pepper Melt butter in large skillet. Add cabbage, onion, and cook on medium high for about 5 minutes stirring to keep from sticking to pan. Add remaining ingredients, cover and simmer for 20 25 minutes. About 8 svg. Only 4 g net carbs per serving. ***I use I Can't Believe It's Not Butter (spray) and turkey sausage. We had some sauerkraut on the side, too. I really wanted to make my AMAAAAZING Irish Stew, Irish soda bread, and drink a couple dark beers, but oh well...

Snacks: cashews, peanuts.


I had essentially no appetite today. I assume that's because I'm sick. I also didn't exercise today. I got to talk to my mom on the phone for a little while tonight, so that was nice.

So, that's basically all. I'm really tired and not feeling great so I'm gonna turn in for the night.
