Mexican Lasagna is the way to a man's heart

It is the simple meals that make men happy. Probably much like children, stop trying so hard. All they want is something gross and simple like mac and cheese. So I found this recipe for Mexican Lasagne and guess what? He went back for 2nd's. Mexican lasagne, really? That doesnt even sound very apealing. It turn out to be good tho and super simple and makes a big pan. Not to mention all the ingredients can he kept laying around or frozen.

Still working on getting better. One day is better one day is worse. Last two days I worked a lot and that did help to feel better. This weekend I can chill out and work on letting my immune system recuperate. Thankfully my dance class happens at 7:30 and 9:40 today so I could sleep in and hit the later one. I so wanna get back to running right now. With the weather nicer I am so ready to get out and breath in the air. It has been awhile. Got a lot of walks in with the pups this week.

We went to this new restaurant yesterday for a birthday party that just opened that's been all the talk of the town lately. Their specialty item they opened for is artisan pizza. The pizza was spicy. I guess I didn't really see all the hub bob the other 12 ppl we were with saw. I tried a lot of food too, I donno I guess I am too simple. In the middle of dinner my mom called me twice in a huge panic to tell me the banks are all closing today and I need to take money out of the bank that night. Worried about her, I called her back after to make sure she was ok. She seemed fine just looking at weird websites online freaking herself out believing everything she reads. Ughhh please tell me this gets better.

    You're right. Most men love comfort food. My hubby loves things like chili, spaghetti, pot roast, fried chicken, chicken fried steak, mac and cheese. Fancy dishes are wasted on him.

    Yesterday was so nice and we spent the day outdoors. Today we are pounded with ice pellets.

    I have never had artisan pizza either and don't know if I would like it. I'm fairly picky compared to a lot of people. I'm fine with a typical pizza with sausage, pepperoni, olives, and banana peppers, green peppers, and jalapenos. i don't want things like sliced tomatoes, kale, ranch dressing, etc, on mine.

    I feel for you about your mom. I guess there will be a learning curve where she is concerned. It will take her some time to get used to a world without your dad.

    The picture was wonderful!! Nice to see men bonding with their pets. It helps humanize them.LOL.

    The Mexican Lasagna sounds delish. I think I will give it a try with MorningStar Crumbles. emoticon

    It's so true! When I make an extravagant meal, Jeff could care less. If I make a simple salad with salmon it's the best meal of all time. I'll never understand it...

    Glad you are feeling better and thinking about getting back to running. If you love it, you should do it :)
