Marinated Sliced Tomatoes With Balsamic Vinegar, Spinach And Cheese

Hello Sparkfamily! I have got tomatoes growing out the ears and I will be canning toay an cooking up a favorite that I know you will enjoy! Take a look!


Balsamic Vinegar
Lemon Juice
Shredded Cheese


Marinate sliced tomatoes with balsamic vinegar for 4-6 hours. Bake at 350F. for about 7 minutes until a little tender. Meanwhile, sauté spinach and garlic with a dash of salt and lemon juice. Put spinach on top of tomatoes and sprinkle with low fat cheese of your choice (I chose Italian blend) and broil til cheese is golden! Enjoy!

    YUM and home grown tomatoes are the best can't wait to start the garden in a couple of months this weekend will be a little warmer and rainy but we are getting there

    I never canned tomatoes because was told it was so hard because of this and that. So that is one thing I decided not to can. Good for you if you know all the cons to be care of.

    Sounds very yummy! I've tried twice to grow tomatoes...once big black ants went in and out, emptying all the tomatoes! Another time, they started to ripen but then turned brown. Don't know what I'm doing wrong, but will try again this year! :_)

    I love tomatoes and the recipe sounds fabulous. At first I was thinking raw with feta cheese. Something I just might try.

The Weather? The weather isn't too bad for being NY 21 degrees High up to 34. Not snowing that's a plus.
